Anand’s 13th Birthday Dinner

Kevin made lasagne and salad, I picked up a red velvet cake at Jewel, because I really wasn’t feeling up to cooking. I admit, I sort of regretted that decision, because the cake wasn’t NEARLY as good as it could’ve been — just boring neutral cake with a boring vanilla frosting.

Red velvet cake should have more zing to it, AND a cream cheese frosting. So say we all. Here’s a recipe that’s likely the kind of thing I’m thinking of, though I haven’t actually made it: https://sallysbakingaddiction.com/red-velvet-layer-cake…/

But oh well, as a parent, you do what you can, when you can. If Anand wants red velvet cake again next year, maybe I can try to do a better job with it. And he was perfectly happy with this one, which is what actually matters.
