Planning to do a Sri Lankan curry powder rub on some steak this evening; thought it would go well with a pineapple-tomato salsa, so chopped it up, combined, and set to marinating. No real recipe — just combine in the proportions that sound good to you. I think I did roughly 1/2 c. minced onion, 1 c. chopped tomato, 1/2 c. chopped pineapple, 3 T fresh lime juice, 3 T chopped cilantro, 1/2 t. salt and 1/4 t. pepper. I I used white pepper, just to keep it looking as bright and pretty as possible. If I’d had jalapeño on hand, I probably would’ve added some of that too. Tasty now, will be better in six hours. Any that’s left, I’ll probably put on fish tacos tomorrow. Also planning to grill corn and serve with a curried yogurt sauce.
