I made turkey meatloaf for the first time in ages, which I know doesn't sound exciting, but this one is truly delicious. It's a recipe I learned from Tasos, one of my old roommates, and I think it's Greek in its origins. So yummy. I don't think it ends up much healthier than regular meatloaf, due to all the cheese, but I don't think it ends up less healthy, either. And I loves it, so perhaps you will too. I've had other turkey meatloafs, and I don't like any of them nearly as well as I like this one -- the white wine and parmesan really complement the turkey.
- 1 egg, beaten
- 1 lb ground turkey
- 1 c. bread crumbs
- 1 c. freshly grated Parmesan-Reggiano
- 1/2 c. white wine or sherry
- 1 medium onion, minced
- 1/2 red bell pepper, minced
- 3 cloves garlic, minced
- 1 t. dried oregano
- 1/2 t. salt
- 1/2 t. pepper
1. Pre-heat oven to 350.
2. Combine all ingredients with your hands in a bowl until well mixed.
3. Mound in non-stick pan, molding a ring shape (so the center is empty, and the loaf cooks evenly).
4. Bake until done, roughly 50-55 minutes. Serve with bread, ketchup, mustard.
