Dandelion syrup, use like maple syrup on pancakes, or like a simple syrup in cocktails, etc. and so on. If you don’t wash the flowers, the pollen clings to it, and there are all kinds of health benefit claims which I have not personally vetted. But it’s tasty, and smells of honey & spring, and it’s satisfying to get some use out of the dandelions. I sent my daughter out to pick them for me. 🙂

I looked at a bunch of recipes and sort of mashed them up into what I ended up doing, but this one is typical: https://naturesnurtureblog.com/homemade-dandelion-syrup/

Note that it’s a two-day process, so start on Saturday if you want them for Sunday-morning waffles.

Remember to only consume flowers & plants that have been grown without herbicides / pesticides / etc.
