Savory Bombatoast

I promised that I’d post the recipe for Savory Bombatoast (Bombay Toast), so here you go. Eggs and bread and onion and tomato and green chili, all in a single delectable slice. Savory French toast, Sri Lankan-style. 

(10-15 minutes, serves 2)

4 slices white bread
2 eggs
1/4 c. milk
1/4 tsp turmeric powder
1/4 – 1/2 tsp salt
1/4 tsp ground black pepper
2-3 green chilies, finely chopped
2 T onion, finely chopped
2 T tomato, finely chopped
butter for spreading, about 2 T

1. Butter both sides of each slice of bread. (You can do these as you go, pretty much.)

2. Beat the egg well and add milk, turmeric, salt, pepper, chilies, onion, and tomato.

3. Dip a slice of bread in the egg and milk batter (both sides) and put it in hot buttered griddle (I’d use nonstick). Use a spoon to scoop up some chili-onion-tomato bits and spread them on if they’re not sticking.

4. After a bit (when it’s browned, but not burned), flip and cook the other side. Repeat for other slices. Serve hot.
