Note: Going to try to do at least two vegetarian (v) dinners/week (up from 1 last fall), fish once a week, a real vegetable most meals :-).
- Friday: rice and curry-from-jar (heat oil, add chili powder, dump in one jar of saag curry sauce, add six chicken thighs) -- we had no groceries in house on return from CA, but a few things in fridge/pantry (Indian-ish)
- Saturday: skirt steak fajitas -- yum, made one big fajita each, should've made more. Love the balsamic onions. Added fresh avocado. (Mexican)
- Sunday: lamb/potato vindaloo with rice -- good, made super-vinegary because I needed to cut through this damn cold. Good thing Kevin likes vinegar. (Indian)
- Monday (v): stuffed green peppers (stuffed with lemon-risotto, tomatoes, pine nuts, parmesan, baked) (Greek?)
- Tuesday: green curry chicken w/ bamboo shoots and peas, rice (Thai)
- Wednesday (v): broccoli soup with cheddar cheese, plus some nice crusty bread (American?)
- Thursday (v): penne with tomatoes, pesto, and artichokes (Italian)
- Friday: Lentil curry, carrot curry, fish curry, rice (Sri Lankan)
