1/4 c. minced fresh ginger
1 c. fresh grated coconut
1-3 green chilies, seeded and chopped
1 c. chopped red onion
1 sprig mint leaves
1 T lime juice
1/2 t. salt
pinch of jaggery or dark brown sugar
1. Combine ingredients in food processor, blender, or mortar-and-pestle and process until well-blended. Serve, garnished with fresh mint.
NOTE: May be frozen for later use.
