We Ordered Thai

We were so tired last night that none of us felt up to cooking, so we ordered Thai food. I always feel a little silly ordering Thai curries, because I usually like mine better than the local restaurants (no shade to them — just a question of style / taste). But it was nice to have something I didn’t have to cook, and for lunch today, I doctored this massaman curry to be more to my taste.

Chopped Thai basil and basil flowers from the garden, sautéed extra onions and two cubed sweet potatoes, added in the curry from last night and the basil, chopped a few chili peppers from the garden, added the leftover chicken satay (taken off the stick and chopped), and added in the tablespoon or so of peanut sauce from the satay. Simmered it all for a while, until the sweet potatoes were cooked through, then added in some chopped pea pods and cooked a few minutes longer.

Reheated the rice (being sure to sprinkle in a little water first) in the microwave, and then had a delectable lunch. Should be plenty left for a few more meals for us.
