We had a big storm a few weeks ago, and several underripe peaches fell off the tree. According to the internet, you can salvage underripe peaches by cooking them down into a compote; they should soften and sweeten.
Well, they did, sort of, but I’m afraid not enough that Kevin or I actually wanted to eat the end result. It was okay, spiced up, over roast pork, and you could alternately add honey and sweeten it enough for ice cream topping, but it just didn’t taste very peach-y regardless.
I’d classify this under desperation cooking — do it if you must, or to avoid waste, but don’t go out of your way for it.
