I forgot the butter for the shortbread needed to come to room temperature, so while watching Scandal, I rolled the lemon truffles in sugar instead (about 15 min. to roll 30 truffles). Lemon snowballs! V. pretty, v. easy, and tastes nice too, though I think this recipe could've used a stronger lemon flavor -- if I were making it again, I'd at least double the amount of zest and use a bit more extract. Still, yummy. Okay, now I really have to finish my grading.
