Start with fresh green tomatoes, chopped a bit.
Bring to a boil, add spices, apple cider vinegar, and sugar, and simmer for five minutes. I used pickling spice (a pre-mixed blend), salt, and pepper. Celery seed and mustard seed are also common. I reduced the amount of sugar the recipe called for, and it still seemed a bit sweet to me, so I'd be really cautious with the sugar!
Put in a colander with a layer of cheesecloth and leave in the sink to drain for an hour. I actually pushed down to try to get some of the liquid out too, and it was still a little liquidy. Oh well. It was fine.
Add chopped onion and red bell pepper and puree it all. It took two batches in my food processor.
Look, so pretty. Great with meat, fish, maybe eggs?
All done! (There were actually twelve jars, but one is in my fridge already...) And see how many green tomatoes I have left? I think chutney is next; I need to go to the store and stock up on fresh ginger...
