Made Roshani’s kale…

Made Roshani's kale salad recipe tonight -- so yummy (both Kev and I were eating handfuls right out of the bowl), and great for a punch of lime to cut through rice and curry. Really ought to make it every time I make curries, I think. And so simple.

  • 3-4 c. kale (beet leaves, chard, etc.), chopped coarsely
  • 1-2 c. onion, chopped finely
  • 1-2 tomatoes, chopped
  • juice of 1-2 limes
  • 1 c. shredded coconut, unsweetened (you can buy frozen fresh in the Indian grocers, or buy dessicated and reconstitute it with milk or coconut milk)
  • 1 t. sugar
  • 1 t. salt
  • 1/2 - 1 t. black pepper

1. Chill all ingredients until just before serving.
2. Mix in large bowl with hands. Serve cold, as an accompaniment to rice and curries.
