You can tell when my life is slightly less crazed because I actually cook a slightly fancy meal once in a while. Tonight: roasted pork on a bed of cauliflower mash (made with shallots, garlic, chicken stock, butter, and buttermilk, yum, will make again), served with sauteed shallot-green beans and a balsamic-apple sauce simmered with sauteed-in-butter sliced Granny Smith apples.

This isn't the sort of cooking I do often (where is the chili powder?), but every time I wasn't quite sure it was going well, I added some butter, and it turned out just fine. Well, fine if you like a stick of butter in your dinner. :-)

  1. This looks wonderful. How do your children feel about such fancy dinners? Some children love trying new foods; some seem not to, in my experience
