So you know Kevin and I are alternating weeks on our cooking, right? I want to try to document my weeks a bit here, in part to get a bit more variety in; I tend to default to rice and curry whenever I get tired/busy. But I do enjoy more variety, as does Kevin. We'll see if I can manage to keep recording these as the year goes on. Please feel free to chime in in the comments with your dinner plans (or dinners past). :-)

Note: Going to try to do at least two vegetarian (v) dinners/week (up from 1 last fall), fish once a week, a real vegetable most meals :-).

  • Friday: rice and curry-from-jar (heat oil, add chili powder, dump in one jar of saag curry sauce, add six chicken thighs) -- we had no groceries in house on return from CA, but a few things in fridge/pantry (Indian-ish)

  • Saturday: skirt steak fajitas -- yum, made one big fajita each, should've made more. Love the balsamic onions. Added fresh avocado. (Mexican)

  • Sunday: lamb/potato vindaloo with rice -- good, made super-vinegary because I needed to cut through this damn cold. Good thing Kevin likes vinegar. (Indian)

  • Monday (v): stuffed green peppers (stuffed with lemon-risotto, tomatoes, pine nuts, parmesan, baked) (Greek?)

  • Tuesday: green curry chicken w/ bamboo shoots and peas, rice (Thai)

  • Wednesday (v): broccoli soup with cheddar cheese, plus some nice crusty bread (American?)

  • Thursday (v): penne with tomatoes, pesto, and artichokes (Italian)

  • Friday: Lentil curry, carrot curry, fish curry, rice (Sri Lankan)

Hmm...this'll probably work better if I wait 'til the end of the week to post these, so I can comment better on what worked or didn't. Will do in future. If I remember. Feel free to remind me if I get to Saturday and haven't posted.
