Today’s Heather and…

Today's Heather and Tim's baby shower, so much of yesterday and this morning were given over to party prep. I'm doing a fair bit of cooking, along the fairy tale tea party theme. We're having a variety of tea sandwiches: creamy mushroom, tamarind-coconut salmon curry, egg salad, prosciutto with goat cheese and fig jam. Also cucumbers with cheese and walnuts, fresh mozzarella, tomato (with incredibly yummy tomatoes from Ron's garden) and basil salad, Thai spiced mango-chicken wontons, and cranberry scones and lemon-poppyseed scones with clotted cream, lemon curd, ginger and strawberry jams. I think they're planning on some additional veggies or fruit, plus a cake, of course -- that should be enough for tea for forty, right? I always fret there won't be enough food...

We're also going to start moving stuff up to the Oakland apartment today. There have been all sorts of problems with that place -- plumbing issues, and now they've found dry rot in the bathroom, so our move-in date has been delayed a bit. I feel bad for the landlord, actually, though I imagine if we didn't have Kev's parents' very nice house as a refuge, I'd be more annoyed than sympathetic.

    Can I find recipes for the following online?
    -mushroom sandwiches
    -wontons
    -both types of scones
    -clotted cream

    The scones and clotted cream I just picked up at Whole Foods, but when I have more time, I make my own scones using the cream scone recipe in the Fannie Farmer cookbook, which is reliably delicious.

    The wontons are actually shrimp in the original recipe, but chicken substitutes just fine.

    And the mushrooms I don’t particularly have a recipe for. Vaguely — chop one onion fine, saute in butter, add about a pound of finely chopped mushrooms, cook until liquid is gone. Add about 1-2 c. heavy cream, cook until thick and spreadable mushroom paste, being careful not to boil over. Season to taste with salt and pepper. Makes enough filling for one loaf of white bread. Cut off the crusts!

    How did you serve the cucumbers with cheese and walnuts? Did you use cream cheese or sliced?

    It’s Kevin’s mom’s recipe, actually, and I don’t remember the proportions exactly. But basically: combine some cream cheese, blue cheese and a little cream to make a tasty spread. Slice cucumbers thin, top each slice with some cheese mixture and a walnut piece.
